A Taste of Jewish Cooking

Here’s what the book says:

Before you say ‘ugh!’ please try this recipe. Tongue is one of those underrated cuts of meat that few seem to understand. In many Jewish homes it is standard fare, and really is quite delicious.

  • 1 8-ounce can tomato sauce
  • 1?2 cup lemon juice
  • 1?4 cup water
  • 2?3 cup raisins
  • 1?2 cup brown sugar
  • 1 fully cooked beef tongue, sliced thin (allow about 1?4 pound per person, at least)

Combine all ingredients in a large pot and bring to a boil. Reduce heat and simmer for one hour. Serve over rice.
