Authentic Jewish Bubba’s* Honey Cake

*Bubba, also bubbe or bobbe, is an affectionate term for a Jewish grandmother.

4 eggs
2 cups sugar
1 cup brown sugar, packed
16 ounces honey, slightly warmed
(clover honey is good)
1⁄2 cup cold, strong coffee
1 cup peanut oil
1 teaspoon vanilla extract
51⁄2 cups flour
2 teaspoons baking powder
2 teaspoons baking soda
2 teaspoons ground allspice
2 teaspoons cinnamon
2 oranges, grated (peel, pulp and all)
1 cup walnuts, chopped

Preheat oven to 350¦. Beat eggs with both sugars. Add honey, brewed coffee, peanut oil and vanilla extract. In a separate bowl, sift flour with baking soda, baking powder and spices. Add grated orange to honey mixture; gradually beat in flour mixture. Add chopped nuts. Bake in a 9×13" pan that has been lined with baker’s parchment paper or brown paper bag cut to fit pan. Bake for 30 minutes or until cake tester inserted in center comes out clean. If cake starts to burn before done, cover top with brown paper and lower temperature by 25¦. Makes 12-16 servings.
