Easy Clean-Up Baked Custard for Fourth of July!

The following recipe is taken from The Jews for Jesus Family Cookbook. It’s a quick, easy and delicious addition to a BBQ dessert spread for this holiday weekend.  It’s almost like a summer blintz. Best of all: it’s so easy, your grandmother can leave the task to someone else!

Here are the details:

Custard can be a wonderfully easy dessert, but no one likes to clean the pan in which the milk is scalded. This recipe, which is about 40 years old, can be made in a blender without first scalding the milk.

  • 2 cups milk
  • 3 eggs
  • 1/3 cup sugar
  • 1 teaspoon vanilla extract
  • pinch of salt

Mix all ingredients in a blender until well blended. Pour into lightly greased custard cups or small molds. Place these in a pan of hot water. Bake at 325 degrees for 1 hour or until set. Makes 6 servings.

After chilling the custard, I suggest topping it with seasonal, fresh, festive red and blue berries.
